San Chez, A Tapas Bistro and Café, Bistro has committed to using 33 percent green power since 2009 and plans to purchase green power for 100 percent of its electricity use by 2015. Restaurants are notoriously high users of electricity, and Dan Gendler, President of San Chez, wanted his restaurant to be part of the solution, not part of the problem. Gendler says, “Not only do our guests appreciate that we are conscious of the environment that they live in, we have raised an awareness of our staff that has equated to over a 15 percent reduction in energy costs or $15,000 per year. Together this makes for a very viable marketing and sales situation. So it is a financial as well as a community decision. It is fantastic when these two things go hand in hand; true sustainability. ” For companies considering “going green,” he recommends they start slowly and proceed methodically, first using energy more wisely, and then buying green power with the money saved.
